Level up your salad game with this Shrimp & Sun Dried Tomato Salad. Nothing is worse than a soggy salad, which is why I began meal prepping chopped salads in a mason jar! This method keeps the dressing at the bottom, ensuring the salad stays crunchy! Additionally, it's visually appealing, and we all know that presentation matters!

The usual Caesar or garden salad can become repetitive over time. That's why I developed this recipe. It offers an ideal combination of texture, umami, and savory flavors! Additionally, it's nutritionally rich with lean protein, heart-healthy fats, and fiber! The perfect trifecta!

Shrimp & Sun Dried Tomato Salad

Yields 4 servings
Ingredients
1½ lbs cooked shrimp, peeled and deveined
2 cups cooked yellow split peas ( check out my Split Pea & Artichoke Hearts recipe!)
½ cup sun-dried tomatoes (not in oil)
2 tbsp olive oil
2 tbsp lemon juice
½ cup feta cheese, crumbled
1 cup cucumber, chopped
1 cup carrot, shredded or chopped
¼ cup fresh parsley, chopped
½ tsp dried oregano
1 jar of roasted red peppers, chopped
Salt and black pepper, to taste
Directions:
Make the Sun-Dried Tomato Herb Mixture
In a small bowl, combine lemon, sun-dried tomatoes, 1½ tbsp olive oil, 2 tbsp chopped parsley, oregano, and a pinch of black pepper. Stir until coated and glossy. Set aside
Layering Instructions
Base: Even distribute the sun dried tomato mixture to all 4 mason jars.
Protein: Evenly distribute cooked shrimp next. This helps marinate the protein with the rich flavors of the sun dried tomato dressing.
Legume layer: Spoon ½ cup yellow split peas with chopped artichokes into the bottom.
Veggie layer: Evenly distribute chopped roasted red peppers. Add the carrots and cucumbers for crunch.
Cheese: Add 2 tbsp feta cheese to each jar.
Finish: Garnish with a sprinkle of fresh parsley or an extra drizzle of olive oil if desired.
