Chicken Taco Soup


Ingredients

(6 servings)

1-½ lbs boneless skinless chicken breasts 

1 medium onion, diced

1 bell pepper, diced

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 (15 oz) can diced tomatoes with green chilies (like Rotel)

1 (8 oz) can tomato sauce

3 cups low-sodium chicken broth

1 packet taco seasoning 

Juice of 1 lime

Optional Toppings: Avocado, sour cream, cilantro, cheddar cheese


Directions:

  • Place the chicken breasts at the bottom of the crock pot. Add onion, bell pepper, black beans, corn, diced tomatoes, tomato sauce, chicken broth, and taco seasoning. Stir gently to combine.

  • Cover and cook on low 6–8 hours or high 3–4 hours.

  • About 30 minutes before serving, shred chicken with two forks.

  • Stir in lime juice. Taste and adjust seasoning with salt, pepper, or more spice if needed.

  • Ladle into bowls and add your favorite toppings. Yumm!
