My favorite way to prepare salad is with a mason jar. It prevents your salads from getting soggy. Plus it looks beautiful when layered with the variety of colors!

Tuna is one of those foods that are under valued. They're budget friendly, an excellent protein source and rich in iron! They're a staple in my house because its a quick and easy protein source. Aside from the tuna, the start of the show is the edamame!



Edamame is starchy vegetables that falls under legumes/beans. Adding more beans to your meals is one of the easiest ways to boost nutrition without sacrificing flavor. Edamame is packed with plant-based protein and fiber, which help keep you full, support digestion, and stabilize blood sugar. They’re also rich in iron, magnesium, potassium, and folate, nutrients that support heart health, and encourage steady energy levels throughout the day!

Spicy Tuna Mason Jar Salad

Prep Time: 25 minutes

Cook Time: 8 minutes

Yields:4 servings


Ingredients

(Yield 4 salads)

4 - 32 oz mason jars

4 (5 oz) cans tuna, drained very well

1/3 cup light mayonnaise

2–3 tbsp sriracha 

2 tbs of soy sauce

1 cup shelled edamame

1 cup pickled carrots, drained

2 cups bok choy or chopped green cabbage

2 cups cooked vermicelli noodles, cooled


Optional: Sesame seeds, Sliced green onions, Splash of tamari, Drizzle of sesame oil



Directions:

Make Tuna Mixture:

  • In a large bowl, mix tuna, mayonnaise, and sriracha until well combined. Divide all ingredients evenly among 4 mason jars, layering to keep everything fresh.

Mason Jar Layering Order (per jar)

  • Bottom:¼ of the spicy tuna mixture 

  • Next: ¼ cup pickled carrots

  • Next: ¼ cup edamame

  • Next: ½ cup bok choy or chopped green cabbage

  • Top: ½ cup vermicelli noodles

Storage & Serving

  • Seal jars tightly and refrigerate up to 4 days.

  • When ready to eat, shake the jar or empty into a bowl and mix well.

Add optional toppings just before eating for extra flavor and texture.
