One- Pot Mexican Lentils

From my childhood kitchen to yours, this Mexican lentils recipe is a fresh and delicious and nutritious recipe made in just one pot!

This Mexican lentils recipe, from my childhood, offers a fresh, delicious, and nutritious dish. Earthy lentils are simmered with aromatic spices, creating a rich, savory broth. Each bite delivers tender texture and bold flavors reminiscent of sun-soaked markets with fresh cilantro and zesty lime. Paired with warm tortillas or rice, it nourishes the body and evokes cherished memories

Lentils are a nutrient powerhouse—rich in protein, fiber, and complex carbs that keep you full and energized. They’re also packed with iron, folate, and magnesium, support heart and digestive health. Versatile and affordable, lentils make it easy to boost nutrition in soups, stews, salads, or tacos.


One - Pot Mexican Lentils


Ingredients

Serves 6-8

2 cups dry red lentils

 1 lb 93% lean ground beef

  1 can black beans (15 oz), drained and rinsed

 1 Tbsp olive oil

 1 medium onion, diced

 4 cloves garlic, minced

  1 can (14.5 oz) fire-roasted diced tomatoes

 1 packet taco seasoning (or homemade taco seasoning)

 4 cups water

 2 Tbsp “Better Than Bouillon” beef broth base

 1 medium lime, juiced

 1/2 bunch cilantro, chopped


Directions:

  • Heat a large pot over medium heat and add the olive oil.Add the diced onion and sauté for 3-4 minutes until softened.Add the minced garlic and cook for another 1-2 minutes until fragrant.

  •  Next, add the ground beef in the pot and cook until brown, breaking it up with a spoon.Drain any excess fat if necessary.

  •  Stir in the dry red lentils, rinsed black beans, and the fire-roasted diced tomatoes (with their juices).

  • Add the taco seasoning packet, “Better Than Bouillon” beef broth base, and 4 cups of water. Stir to combine all ingredients.

  •  Bring the mixture to a boil, then reduce the heat to low.Cover the pot and let it simmer for 25-30 minutes, or until the lentils are tender and the stew has thickened. Stir occasionally to prevent sticking.

  •  Once the stew is done cooking, stir in the juice of one lime. Taste and adjust seasoning if needed (add more salt, pepper, or lime juice).

  •  Serve the stew hot. You can garnish with  cilantro, a dollop of sour cream, or a sprinkle of cheese if desired.


Notes:

If you don’t have “Better Than Bouillon,” you can substitute with 4 cups of beef broth instead of water and omit the bouillon base. This stew thickens as it cools; add more water or broth if you prefer a thinner consistency.


Nutrition for 1/6th serving: 478 calories, 39gm protein, and 55gm of carbohydrates, 15gm of Fat
