Easy Peanut Butter Protein Bites


Yields: 12 bites

Prep Time: 15 minutes

Cook Time: 2-4 hours (for chilling)


Ingredients

  • 1.5 cups peanut butter powder (such as PB2) or regular peanut butter **see notes

  •  1 scoop Legion Whey+ Vanilla Protein Powder (code PatriciaE for 20% off your legion order)

  •   1/2 tablespoon coconut oil

  •  3/4 cup unsweetened applesauce or 1/2 cup of low calorie sweetener (monk fruit, stevia, etc)

  • 75 grams Lily’s Dark Chocolate Chips (sugar-free)



Directions:

  1. In a large bowl, mix peanut butter powder, protein powder, applesauce, and coconut oil until smooth.

  2. Roll the mixture into 12 balls and place on a parchment-lined tray.

  3. Melt Lily’s Dark Chocolate Chips in 30-second intervals until smooth.

  4. Dip each ball in the melted chocolate and return to the tray.

  5. Refrigerate for 1-2 hours until the chocolate sets.

  6. Optional: Sprinkle sea salt and chopped walnuts on top before cooling.

  7. Store in an airtight container in the fridge for up to 7 days or freeze for longer storage.
