Slow Cooker Asian BBQ Beef
Yields: 4-6 servings
Prep Time: 10 minutes
Cook Time: 6-8 hours
Ingredients
2 lbs sirloin beef roast, trimmed of visible fat
½ tsp salt
½ tsp black pepper
3 garlic cloves, minced
1 Tbsp pureed fresh ginger
½ cup sugar-free honey barbecue sauce
¼ cup low-sodium soy sauce
1½ Tbsp gochujang sauce (adjust to heat preference)
¼ cup water or beef broth
Optional:
1 tsp sesame oil (for richer flavor)
1 Tbsp rice vinegar or lime juice (for brightness)
Sliced green onions and sesame seeds for garnish
Directions:
Pat the sirloin dry, trim excess fat, then rub with salt and pepper.
Whisk together barbecue sauce, soy sauce, gochujang, garlic, ginger, and water (optional: sesame oil or vinegar).
Place beef in the crock pot and pour the sauce over it. Set on low for 6–8 hours or on high for 4–5 hours, until very tender.
Remove beef, shred with two forks, return to the pot, stir, and cook 15–20 more minutes on low.
Serve over jasmine rice, cauliflower rice, or veggies. Garnish with green onions and sesame seeds. Make it for dinner or for your meal prep! Yum!!
