LecheMisu Baked Protein Oats

I have a confession: I've never been able to pick a favorite dessert between tres-leches cake and tiramisu. So instead of choosing, I decided to fuse them together and somehow, baked protein oats turned out to be the perfect vehicle for it. Listen...sometimes you just got to let the creativity flow!!
And so it led me here, to a well balanced, sweet & comforting breakfast!

If you're anything like me, you love a sweet breakfast, but hate having a mid-day sugar crash.
The problem is most sweet breakfast are very high in refined carbohydrates, very little fiber and almost no protein.
This leaves you with a sugar crash by mid morning and very hungry only a couple hours later. 😩😩
So, I got creative :)

I combined my favorite Mexican dessert with a beloved Italian classic to create a well-balanced breakfast! Tirmasu + Tres Leches + Baked Protein Oats = LecheMisu Baked Protein Oats!
A single serving comes in at around 300 calories with an impressive 18 grams of protein — thanks to a combination of Greek yogurt, eggs, and whey protein isolate folded right into the tres- leches soak.
You're also getting about 3 grams of fiber per serving from the rolled oats, which helps keep this feeling more like a balanced meal than a sugar bomb like waffles or pancakes.

LecheMisu Baked Protein Oats
Prep Time: 15 minutes
Cook Time: 2 hours
Yields: 12 servings
Ingredients
Base:
4 cups rolled oats
4 whole eggs
2 cups plain Greek yogurt
2 cups unsweetened almond milk
2 tbsp instant espresso powder
1/3 cup maple syrup
1 tbsp vanilla extract
2 tsp baking powder
1/2 tsp salt
Soak:
1 cup half and half or whole milk
1/4 cup maple syrup or sweetener alternative of choice
2.5 scoops Vanilla Whey Protein Powder (~80g) - I used Transparent labs Whey Protein isolate
1 tsp instant espresso powder (optional, but adds an extra coffee flavor boost!)
Topping:
1 cup Greek yogurt
1 box (3.4 oz) instant cheesecake pudding mix
1 cup almond milk
Unsweetened cocoa powder, for dusting
Directions:
BASE (BAKED OATS)
Preheat oven to 350°F. Grease a 9x13 dish.
Whisk eggs, yogurt, almond milk, dissolved espresso, maple syrup, and vanilla until smooth.
Stir in oats, baking powder, salt, and cinnamon.
Pour into dish, spread evenly.
Bake 30-35 minutes, until set and lightly golden. Toothpick should come out clean.
Cool 15-20 minutes before soaking.
TRES LECHES SOAK
Whisk all ingredients until protein powder fully dissolves.
Poke holes all over the cooled oats with a fork or skewer. Slowly pour mixture over the top.
Let sit 15-20 minutes, or refrigerate a couple hours to fully absorb.
“MARSCAPONE” TOPPING
Whisk pudding mix with almond milk until it thickens (1-2 min).Fold in Greek yogurt until smooth. Spread evenly over soaked oats. Dust Cocoa poswer generously over the top (recommend using a sifter) . Refrigerate at least 1 hour before slicing. Enjoy!
NOTES
Extra tiramisu flavor: add a splash of espresso to the soak!
Refrigerate up to 4-5 days, covered
Tastes even better the next day once fully chilled and set!
