100 Calorie Chocolate Chip Muffin
Prep Time: 10minutes
Cook Time: ~20 minutes
Yields: 12 muffins
Ingredients
Wet Ingredients
1 cup pumpkin puree
1 cup liquid egg whites
1/4 cup unsweetened almond milk
3/4 cup granulated sweetener (i.e stevia, monk fruit or sucralose)
1 tsp vanilla extract
Dry Ingredients
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
2 tsp baking powder
1/4 tsp salt
1/2 cup Lily’s dark chocolate chips
Optional: Flaked sea salt
Directions:
Preheat oven to 350°F. Line or spray a 12-cup muffin tin.
In a large bowl, whisk all wet ingredients until smooth.
In a separate bowl, whisk together all dry ingredients until well combined.
Add dry ingredients to wet ingredients and mix until just combined. Be careful not to over mix (this keeps the muffins soft and tender).
Fold in chocolate chips.Divide batter evenly into 12 muffins.
Optional: top each muffin with a few extra chocolate chips.
Bake for 18–22 minutes, or until a toothpick comes out mostly clean.
Let cool for 10–15 minutes before serving. You can add some flaked sea salt to elevate the rich chocolate flavor. Enjoy!
Notes:
The consistency should be “cake batter” like and pourable. If it is too thick, add a splash of almond milk.
Store in fridge for up to 5 days or freeze for later!
