Cinnamon Glazed Protein Doughnuts

Yields: 6 servings
Ingredients
Doughnut Batter
1 cup nonfat plain Greek yogurt
2 scoops vanilla protein powder ( I used Vanilla by Transparent labs)
3/4 cup all-purpose flour
1 egg
2–4 tbsp milk
2 tbsp brown sugar
1 tsp vanilla extract
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
Cinnamon Vanilla Glaze
1/4 cup powdered sugar
½ scoop vanilla protein powder ( I used Vanilla by Transparent labs)
~ ¼ cup greek yogurt
2 tsp of cinnamon
Directions:
Preheat oven to 350°F and spray a donut pan well with cooking spray.
In a large bowl, mix together: Greek yogurt, egg, milk, brown sugar, vanilla extract
In a separate bowl, whisk together: flour, protein powder, cinnamon, baking powder, salt
Combine wet and dry ingredients until smooth. Careful not to over-stir or doughnuts will be chewy. Batter should be thick but scoopable.
Spoon or pipe batter into donut pan.
Bake for 10-12 minutes, or until lightly golden and cooked through. Let cool for 10 minutes before glazing.
Glaze: Whisk together powdered sugar, yogurt, protein powder, and cinnamon until smooth. Dip each doughnut into glaze
Notes:
Careful not to overbake! Slightly underbaking keeps the donuts soft and moist
Store in the fridge for up to 5 days
