Garlic Bread Bruschetta

Garlic bread bruschetta is an easy and versatile recipe that makes a perfect side for any dish. This delightful appetizer combines the rich, aromatic flavors of garlic with the crispy, toasted texture of bread, creating a mouthwatering experience that complements a wide variety of meals.


Garlic Bread Bruschetta


Ingredients

Serves 4

1 large baguettes, sliced in half, open faced or 6 slices sour dough bread

6-8 fresh basil leaves, chopped

2 whole garlic bulbs

12 oz of cherry tomatoes, quartered

8 oz of fresh mozzarella

2 tbs of olive oil, plus an additional for roasting

balsamic glaze for drizzling

Salt & pepper


Directions:

  • Preheat oven to 350 degrees Fahrenheit.

  • Roasted Garlic: Slice whole garlic bulbs horizontally, in half. Drizzle with olive oil, and season with salt. Wrap bulbs in aluminum foil and roast for ~ 20 minutes or until garlic is very soft. Remove from oven. Once cooled, squeeze garlic bulb so all the cloves fall out. Place cloves into a bowl & mash the roasted garlic with a fork to create a p mash the roasted

  • Line a large sheet pan with parchment paper. Spread roasted garlic on each slice. Drizzle slices with olive oil. Evenly distribute sliced mozzarella to each slice of bread. Toast in oven for ~ 5-10 minutes or until cheese melts.

  • Mean while, in a large bowl mix tomatoes, basil, olive oil, salt and pepper, Set aside

  • Once cheese is melted on bread, remove from oven and evenly spoon bruschetta onto toasted slices. Drizzle with balsamic glaze. Serve immediately!


Pairs well as a side dish or as a fresh appetizer! Yumm!
