Healthy Crockpot Buffalo Chicken Dip
Prep Time: 10 minutes
Cook Time: 6-7 hours
Yields: 6-8 servings
Ingredients
1.5 lbs boneless, skinless chicken breasts
1 cup plain Greek yogurt (2% or full fat yogurt)
½ cup hot sauce (Frank's RedHot recommended)
1 packet (1 oz) ranch seasoning mix
Salt & black pepper to taste
Optional: Top with chopped green onions, cilantro or a sprinkle of paprika for richer color
Directions:
Place chicken breasts in the crock pot and season both sides with salt and pepper.
Pour the hot sauce over the chicken, then sprinkle the ranch seasoning evenly on top.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through and easily shreds.
Remove the chicken breasts and shred them using two forks, then return the shredded chicken to the crock pot.
Add the Greek yogurt and stir everything together until well combined and creamy. Taste and adjust salt, pepper, or hot sauce as needed.
Set the crock pot to the warm setting until ready to serve or serve as an entree for you meal preps! Serve with celery sticks, carrot sticks, or crackers!
Notes:
Don't add the Greek yogurt too early — adding it at the end prevents it from curdling or separating during the long cook time.
Leftovers keep in the fridge for up to 4 days and reheat well.
