Crispy Eggplant Fritters

My eggplant was thriving in my garden! Here's one of my inventive methods for preparing a quick, nutritious snack: making eggplant fritters in the air fryer.



Instead of your typical ratatouille or baba ghanoush, why not explore a delightful and unique eggplant fritter recipe that will tantalize your taste buds? This dish not only offers a refreshing twist on traditional eggplant preparations but also combines simplicity with nutrition, making it an excellent choice for both busy weeknights and leisurely weekend brunches. The fritters are quick to prepare, requiring minimal ingredients and effort, yet they pack a flavorful punch that is sure to impress family and friends.

Eggplant Fritters


Ingredients

(makes ~10 fritters):

1 medium eggplant

2 eggs 

1 cup seasoned bread crumbs

½ tsp garlic powder

½ tsp Italian seasoning  salt and black pepper to taste

Optional: olive oil spray for extra crispness


Directions:

  • Slice eggplant into ¼-inch rounds, salt lightly, and let sit for 5 minutes before patting dry. Prepare bread crumbs while waiting.

  • Combine breadcrumbs, garlic powder, and Italian seasoning in a bowl.

  •  Dip each slice in egg wash, then coat with the breadcrumb mixture.

  • Spray basket with olive oil and air fry at 400°F (200°C) for 8–10 minutes, flipping halfway until golden and crisp.


No Air Fryer? Pan-fry in 2 tbsp olive oil over medium heat for 3–4 minutes per side until golden and tender.


Serve with marinara, yogurt dip, or lemon, garnished optionally with parsley or parmesan.
