Creamy Chicken Queso Pasta

This is one of my favorite recipes! It offers the comforting taste of cheesy pasta, but with fewer calories and higher protein, perfect for anyone undergoing body recomposition!

The greatest advantage of using a crock pot for cooking is that everything is prepared in one single vessel, reducing the amount of cleanup required after a meal. This means that you can spend less time scrubbing pots and pans and more time enjoying your delicious creation. The ease of preparation is another major benefit; simply gather your ingredients, toss them into the crock pot, set the temperature, and let it work its magic while you go about your day.
The addition of queso gives it an exciting kick that sets this slow cooker recipe apart. The combination of creamy cheeses melded together creates a rich and velvety texture that is simply delightful on the palate. Creamy Queso Chicken Pasta
Ingredients
(6-8 servings)
2lbs boneless, skinless chicken breast
1 box (14.5 oz) of Protein pasta
3 red or orange bell peppers, diced
1 sprig of fresh cilantro, chopped
13 oz reduced fat velveeta cheese
1 cup of low fat cottage cheese
1/2 cup of 2% milk
4 oz reduced fat cream cheese
1 small can of green chilies
1 can (14.5oz) fire roasted diced tomatoes
1 can (12oz) red enchilada sauce
2 tsp garlic powder
2 tsp onion powder
2 tsp Cayenne pepper (optional)
Salt and pepper to taste
Directions:
Spray a large slow cooker with non-stick spray. Add the chicken at the bottom of the pot.
Pour enchilada sauce and add seasonings to slow cooker. Cook on high for ~3 hours. Shred chicken with 2 forks.
Cook pasta per box directions. Set aside.
Add the rest of the ingredients, including the pasta. Cook for an additional 2 hours. Stir well and serve immediately.
Note: You can cook the pasta in the crock pot, but you will need to add more milk so that it can cook thoroughly!
