The good news: you don't have to choose between chasing your goals and chasing that ice cream truck ;) . These protein ice cream sandwiches are cold, creamy, ridiculously satisfying and they've got your macros covered too

I found that instead of "white knuckling" through a fat loss phase, it is best to find healthier substitutions. Restriction only leads to temptation, which leads to over eating.


If you want real ice cream every once in a while, go for it. But if you're deep in a fat loss phase and have strong cravings, this is a GREAT alternative.


Again, it's about finding substitutions that align with your goals! You have to be stubborn about your goals, but flexible with your methods.

High Protein Strawberry Ice cream Sandwiches

Prep Time: 20 minutes

Cook Time: At least 6 hours (freeze)

Yields: 12 servings


Ingredients

2 cups frozen strawberries

½ cup low-fat vanilla Greek yogurt

2 tbsp stevia or low-calorie sweetener

2 scoops of vanilla whey protein powder ( I used transparent labs)

½ cup almond milk

ÂĽ tsp xanthan gum (optional: helps create a creamie texture)

2–3 ice cubes

1 pinch of salt

3/4 cup dark chocolate chips

~24 full chocolate graham crackers



Directions:

  1. Line a 9x13 baking pan with parchment paper. Lay 12 graham crackers in a single layer across the bottom. Melt the dark chocolate chips in the microwave in 30-second intervals, stirring between each, until smooth.

  2. Drizzle half the melted chocolate over the crackers, then place the pan in the freezer for 10–15 minutes until the chocolate sets.

  3. While the crackers are in the freezer, combine strawberries, greek yogurt, stevia, protein powder, xantham gum, and ice cubes in a high-powered blender and blend until thick and smooth, about 60–90 seconds.

  4. Remove the pan from the freezer and spread the strawberry filling evenly over the chocolate-coated crackers.

  5. Lay the remaining 12 graham crackers on top and press down firmly, then drizzle the remaining melted chocolate over the crackers.

  6. Cover and freeze overnight. Lift out using the parchment, slice into 12 sandwiches, and serve.


Notes:

  • For thicker filling: Use less almond milk or add more frozen strawberries for a denser, creamier scoop.

  • Easier cutting: Run your knife under hot water before slicing for clean cuts or let it sit at room temperature for ~ 10 minutes to soften the sandwiches.


Nutrition per 1 sandwich: 266 calories, 8gm protein, 39 gm, 40 gms of carbs, 9gm of fat
