Protein-packed breakfast with a Mexican twist! Mexican cuisine is celebrated for its bold flavors, vivid presentations, and fresh ingredients. For breakfast, adding these unique flavors to my egg white bake recipes kills the monotony of basic scrambled eggs!

Chorizo con huevos is a Mexican classic comfort food of mine..
BUT....
when you have nutrition goals, you have to be stubborn about your goals, but flexible with your methods!
Egg white bakes are one of my breakfast staples! They make a lot of volume without a lot of calories. AND they provide 26 grams of protein and only ~220 calories per serving!

This recipe includes soy chorizo...now before you come at me 😂, hear me out....
I chose soy- chorizo because you get extra fiber boost from the soy (beans!), & much less calories from fat,
So this give me the opportunity to add avocado as my fat serving instead!
You can use regular chorizo, but omit the avocado to keep your macronutrients more balanced!
Healthy eating is not about demonizing one nutrient or food. It is about asking what else is on your plate or what you can add to it that aligns with your nutrition goals.

I've also started adding oats to my egg white bakes instead of corn starch.
I've found that oats work better than corn starch to absorb the fluid, so you don't get runny/rubbery egg whites AND you get additional FIBER! 😇

Mexican Egg White Bake
Ingredients
1 carton liquid egg whites (32 oz)
2 whole eggs
3 servings soy chorizo (I used Soy Chorizo by Morning star)
1 cup diced bell peppers
½ cup diced onion
⅓ cup sliced black olives
½ cup fat-free cottage cheese
¼ cup rolled oats
½ tsp cumin
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Optional Toppings
¼ cup queso fresco, crumbled
Crema, for drizzling
Fresh cilantro, chopped
Directions:
Preheat oven to 375°F and lightly grease an 13x9 or 9×9 baking dish.
In a skillet over medium heat, cook the soy chorizo, diced onion, and bell peppers for 4–5 minutes, until vegetables soften.
In a large bowl combine egg whites, whole eggs, cottage cheese, oats, cumin, garlic powder, salt, and pepper. Stir until evenly mixed.
Spread the chorizo mixture and black olives evenly in the baking dish. Pour the egg mixture over the top and gently stir once to distribute ingredients.
Bake for 30–35 minutes for the 9x9 pan, 25 minutes for the 13x9 pan, or until the center is set.
Let the bake rest for 10 minutes before slicing. Top with queso fresco, crema drizzle, and chopped cilantro.
