Kale & Sweet Potato Salad with Honey Mustard Tahini Sauce

Ingredients
For the Salad
1 large bunch kale, stems removed + chopped
2 medium sweet potatoes, peeled + julienned or chopped
1 can (15 oz) chickpeas, drained, rinsed, and thoroughly dried
½ cup feta cheese, crumbled
¼ cup pepitas (pumpkin seeds)
1 tbsp olive oil
1/2 medium sweet onion, sliced
Salt & pepper, to taste
1 tbsp of paprika
Honey Mustard Tahini Dressing
3 tbsp tahini
1 tbsp Dijon mustard
1 tbsp whole-grain mustard (optional, for texture)
1 ½ tbsp honey
1 ½–2 tbsp lemon juice
1 clove garlic, grated or minced
Salt & pepper, to taste
Directions:
Preheat oven to 425°F and line a baking sheet with parchment.
Spread the diced sweet potatoes, onions and dried chickpeas on the tray. Drizzle with olive oil, then season with smoked paprika, garlic powder, onion powder, salt, and pepper. Toss and roast for 20–25 minutes, shaking the pan halfway through.
Add chopped kale to a large bowl. Drizzle with a little olive oil and a pinch of salt, then massage for 30–60 seconds until softened.
Whisk together tahini, Dijon, whole-grain mustard, honey, lemon juice, garlic, salt, and pepper. Add warm water until smooth and pourable.
Assemble by adding the massaged kale to a bowl, topping with roasted sweet potatoes and chickpeas, then adding feta and pepitas.
Drizzle with the honey mustard tahini dressing and toss before serving. Enjoy!
